Our naturally fermented slaws are never Heated or Pasteurised and are absolutely full of Life. Nothing is added, as we firmly believe that Mother Nature knows best.

Fermented Foods – A Whistle-stop Tour..

 

Despite its unusual name, eating fermented food is in fact both delicious & super healthy.

 Like many tasty things, this process has been around for rather a long time… Since early civilisation the fermentation process has been used to preserve food as well as providing an enormous range of flavours and health benefits.

Fermented foods can be traced back to almost every part of the Globe –ranging from products such as Korean Kim-chi, Indian idli and German Sauerkraut.

Aside from our all natural ingredients – the only extras needed are salt, a lack of oxygen and a cool temperature.

Why the added Salt?? Well, Salt is natural and Microorganisms (bacteria, molds and yeasts) in foods that are harmful to humans do not tolerate salt. However when our selected organic vegetables are mixed with this salt, all of these unwanted microbes are killed off, letting only the beneficial microorganisms thrive. These salt-tolerant survivors of this process are called lactobacillus. They are the helpful microbes that aid happier, healthier guts!
